The Sapadaria is an artisanal bakery created in 2020 that operates by order in São Paulo. The name is a fusion between the words “sapatão”, a slang term for lesbian, and bakery. This is because the owner of the business, chef Catharina Fischer, is a homosexual woman.

During the pandemic, the chef, who worked in restaurants like D.O.M, Dalva e Dito, and Kouzina, decided to have her own establishment.
In the midst of social isolation, she quit her old job and opened Sapadaria in partnership with her former girlfriend. Her goal was to merge activism in the LGBTQIA+ cause with the desire to work with original products.
In the beginning, the bakery had a total production of six loaves per day. Currently, the business has moved beyond the home scale and has the infrastructure to produce hundreds daily.
The business has two employees. Catharina is the CEO, buyer, cook, administrator, seller, and delivery person. Thaís, her girlfriend, works producing professional photos and managing the brand’s social media.
Sapadaria currently works providing products to restaurants, bars, cafes, and caterers, and on Fridays, they deliver batches to customers who order via WhatsApp. It is also possible to hire the service for coffee breaks, events, and corporate fairs.
The store is in a phase of expansion, with new customers arriving every day. Sapadaria’s next challenge is to open a physical store and, for that, they are looking for investors. There is also a plan to create a business model to franchise the brand in other cities in Brazil.
The menu includes delights such as natural fermentation breads, focaccias, cinnamon rolls, and brownies. For the month of June, when LGBTQIA+ Pride is celebrated, the chef is preparing the launch of a new menu.
